Braised fish fillet with soybeans
Overview
When I was making this dish, I had a lot of orders ahead of me, so I was a bit busy and didn’t have time to take some pictures.

Ingredients
Steps
-
After the soybeans are fried, put them in a small basin and soak them in water
-
The fish larvae are fried well, but don’t fry the fish too dry, otherwise it won’t taste good. Don’t make it too wet, as the fish may break easily due to the water content
-
Add oil to the pot, mince the garlic, cut the ginger into small cubes and put it into the pot and saute until fragrant
-
Pour out more than half of the water used to soak the soybeans, leaving only about 100 grams, then pour it into the pot and simmer for 1 minute
-
Add the fish fillets, chicken essence, sugar, MSG, pepper, and soy sauce and continue stir-frying for 2 minutes. You can add a little more water when it dries up, but don’t add too much.
-
Add scallions
-
Stir fry for a few times and then add oyster sauce
-
Order the gravy, add a few drops of sesame oil and a little chili oil to the gravy, stir-fry twice and it's ready to serve. (Because this dish was ordered by the customer, and this step needs to be done quickly, there is no time to take pictures)
