I made monkey glutinous rice balls for the Lantern Festival last year, so this year it’s my turn to make chicken glutinous rice balls

Wash and drain black and white sesame seeds

Place in the oven at 110 degrees for 10 minutes to dry out the moisture, then turn to 180 degrees for about 20 minutes to toast the sesame seeds

Cool the sesame seeds and prepare sugar and other ingredients

Crush the sesame seeds and sugar in a food processor

Crush peanuts and mix with sesame seeds

Add lard, mix well and refrigerate for one hour

Mix glutinous rice flour with warm water

Take some mixed glutinous rice dough, add a little matcha powder and red yeast rice powder and knead evenly

These are two small pieces of kneaded glutinous rice balls

Next, divide the filling into 10 grams each, and the glutinous rice balls 12 grams each

First, shape the glutinous rice ball into a lamp shape with your fingers, wrap it in the filling, gather it together, pinch and knead it until smooth to make a round glutinous rice ball

Then use red and green glutinous rice noodles to make the mouth and cockscomb, use black rice to make the eyes, freeze them in the refrigerator, and cook them as you go
