Homemade Three Fresh Wontons

Add appropriate amount of water to the ordinary flour one by one, and mix with chopsticks into a snowflake shape. Cold or warm water is fine.

Then use your hands to form a dough and cover the noodles for twenty minutes.

While the noodles are cooking, mix the fillings. Wash the shrimps, remove any sand lines, and cut into several sections. You can also chop it into puree, it depends on your personal preference.

Marinate with a little salt, cooking wine, and light soy sauce for a while.

Heat the oil in a pan, beat the eggs with salt, and fry over low heat until they are broken into pieces. The ripeness of seven or eight is fine, because it still needs to be stuffed and cooked. If it is fully cooked, it will be too hard.

Wash and chop the leeks, mix them with the shrimp, chopped eggs, and chopped green onions. Add an appropriate amount of vegetable oil and chicken powder and mix thoroughly. Seasoning them separately in this way can prevent the leeks from releasing juice after adding salt,

Take a piece of dough, roll it into a thin sheet, first cut it lengthwise into pieces of equal width, and then cut it crosswise, so that you get a square piece of dough.

As shown in the picture, place an appropriate amount of filling on the upper side of the dough sheet. Be careful not to put too much and don't get it on the dough on both sides. This will make it difficult to pinch tightly and the filling will be exposed during cooking.

Turn the dough sheet over, wrap the filling, and pinch the edges together.

Flip the two corners back as shown in the picture, pinch them together behind the back, and a wonton is ready. You can also pinch it in front, both are fine.

While making wontons, add stock, water, chopped green onion, salt and light soy sauce to the pot and bring to a boil over low heat. If you don't have stock, you can use half of Knorr Soup Pot, or clear soup is also delicious.

Put the wrapped wontons into the soup and cook over low heat, or like dumplings, pour cold water twice along the edge of the pot until they float and cook through.

Before serving, add a little seaweed and beat the salted egg liquid into egg droplets.
