Soak the ribs in water for one hour to remove the blood.

Pour cold water into the pot, add an appropriate amount of cooking wine to remove the fishy smell after the water boils, cook for three minutes to skim off the foam, and then rinse with clean water.

Onion and ginger slices, rock sugar, cinnamon, star anise, and hot pepper are ready.

Put oil in the pot, heat it slightly, add rock sugar, and stir-fry the sugar color over low heat. When it slowly melts, large bubbles will appear at first, then become slightly bubbling.

Add the blanched pork ribs and stir-fry for a few times until browned.

Add the other seasonings except the chili pepper and continue to stir-fry evenly.

Add a bottle of cooking wine to remove the fishy smell. Depending on the color of the fried ribs, you will decide whether to add light soy sauce for coloring. I have less ribs in this dish, so I did not add light soy sauce.

Transfer to the pressure cooker, put the chili peppers in, pour in an appropriate amount of water, and add an appropriate amount of salt to taste.

After steaming, turn to medium heat for fifteen minutes and turn to low heat for five minutes.
