Cut the lean pork into thin strips, add a small amount of salt and a few drops of white wine to taste and marinate for 10 minutes

To prepare the sauce, beat two eggs in a bowl, add the same amount of starch as the eggs, stir into a paddle and add the marinated meat, ready to be fried

Pour oil into the pot, a little more oil, and fry the meat until crispy. Be careful to stir frequently so that the color is evenly coated

Place oil-absorbing paper on a plate, put the fried crispy meat in and let cool

Pour the crispy pork into a small bowl, add star anise, cinnamon, bay leaves, dried chili peppers, Sichuan peppercorns, cumin, green onions and ginger slices and set aside

To adjust the sauce, put a small amount of salt, white pepper, a small amount of light soy sauce into a bowl, add a few drops of dark soy sauce, pour in water and mix well

Pour the prepared sauce onto the crispy pork, steam over high heat for 10 minutes, then turn to medium heat and steam for 30 minutes before removing from the pan
