Braised Fish Segments
Overview
Four carp weighing more than 1 kilogram, only the middle parts were taken and braised in brown sauce. The meat was very tender and had a strong flavor, which was very delicious.

Scrape the scales off the carp segments to remove the black belly and clean them

Put cooking wine, soy sauce and a little salt into a basin and marinate for 2 hours

Put more oil in the non-stick pan, fry the fish segments on both sides over medium-low heat

Take out the fish segments, leave the base oil, add spices and stir-fry until fragrant

Add the fried fish segments, cover the fish body with water, cover and simmer for 15 minutes
