Kill and wash the grass carp.

Remove the head and tail and cut into approximately 1.5 cm pieces.

Add a little shredded ginger and 2 tablespoons of cooking wine and marinate for 30 minutes. Drain and set aside.

Add bay leaves, star anise, cinnamon, green onions, ginger, vinegar, 2 tablespoons of cooking wine, salt, sugar, and 1 small bowl of water to the pot. Stir well and bring to a boil over high heat. Simmer over low heat for 5 minutes.

Turn off the heat and let cool until set aside.

Pour oil into the pot and when it is 70% hot, add the fish pieces and fry.
