Trim off the shrimp whiskers

Use a toothpick to pick out the black shrimp intestines from the second section on the back of the shrimp.

Rinse with water and drain, add cooking wine, salt, green onion and ginger, marinate for 15 minutes.

Cut the garlic and ginger into small pieces, mix with sugar, vinegar and soy sauce and set aside.

Put more oil in the pot, fry the shrimps over medium-low heat.

Fry until the shrimp changes color and the shell is slightly crispy.

Leave a little remaining oil, add ginger and garlic and stir-fry until fragrant.

Add the fried shrimps, pour in the sauce, add pepper and green onions and stir-fry evenly.

Take it out of the pan and plate it up.
