Hot and sour potato shreds
Overview
Shredded potatoes are the most common home-cooked dish in my hometown. My grandma’s fried shredded potatoes are the most delicious I have ever tasted. I have tried it countless times, but it only comes close to it and I was very disappointed. So I decided to find a new way and try spicy and sour shredded potatoes. It was not bad, so I would like to share it.

Peel and wash the potatoes and cut into shreds, not too fine.

Boil the shredded potatoes in boiling water for 1-2 minutes, then remove them and put them in cold water, or soak them directly in cold water. Don't cook it too long.

Cut a handful of dried chilies into sections, cut green onions into sections, slice garlic, and cut two slices of ginger.

Put a little more oil in the pot. When the oil is hot, turn down the heat and add ginger slices, garlic slices, green onion segments and dried chili peppers in sequence. Add half a teaspoon of salt and stir-fry for a while until the aroma comes out. Then turn to high heat. Add the dried potato shreds. Add two spoons of vinegar. Stir-fry. Stir-fry over high heat until the shredded potatoes are broken. Add half a spoonful of soy sauce before serving. Don't fry for too long, otherwise the shredded potato noodles will not taste good.
