Stir-fried pork with asparagus
Overview
Asparagus is a delicious vegetable discovered in the past two years, and the price has become very cheap in the past two years. The morning market here at my house costs five yuan for a handful. In addition to being served cold or grilled in tin foil, I found that asparagus stir-fried with meat is also delicious. The refreshing and crispy texture just balances the greasiness of the meat and vegetables, which is very suitable for hot and unappetizing summers. The method may seem troublesome, but it is actually very simple.

Steps
-
Cut the pork into chopstick-thick strips (you can also cut it into thin slices, but shredding is faster, and it is easier to hold when eating in the same shape as the asparagus. It is recommended to choose lean pork, because the taste of this dish is still refreshing.)
-
Ginger slices
-
Add allspice powder, Sichuan pepper powder, ginger powder, white pepper powder, cooking wine, soy sauce, oyster sauce, dry starch and a small amount of vegetable oil to the meat, add ginger slices and dried chili shreds, stir evenly and marinate. (The richer the seasonings, the more delicious they are; chili shreds will give the dish a slightly spicy flavor and enhance the taste. Be sure not to add too much, as it will overwhelm the others; adding dry starch will make the meat more tender, and it will be less likely to stick to the pan when stir-frying with vegetable oil.)
-
Wash the asparagus, peel off the lower half of the skin, and pinch off the old roots (if the asparagus is fresh and tender enough, just wash it clean)
-
Cut the asparagus into inch-long sections with a diagonal knife, as shown in the picture.
-
Put oil in the pan, and when the oil is hot, add the marinated shredded pork and stir-fry.
-
Stir-fry until the oil in the pot is clear, add asparagus and stir-fry, add a little water, stir-fry for 2-3 minutes, add a small amount of vinegar before putting it in the pot.
-
Serve on a plate and eat. The refreshing vegetables and tender shredded meat echo each other, making it very appetizing even in summer.
