Soak the oily pig skin in cold water until soft and wash. 3cm square block.

Boil the sliced bamboo shoots in water for 10 minutes.

Wash and slice peppers and carrots.

Cut green onion into sections and slice ginger.

Heat up the pan, add a little salt when the oil is hot, then add the carrot slices and fry for a while.

When the carrot slices are a little soft, add the peppercorns and stir-fry briefly. Set aside.

Add a little oil to the pot, sauté the ginger slices until fragrant, cut the green onion and add it to the skin.

Add rice wine and stir-fry for a while, then add water and bring to a boil.

Add bamboo shoots, bring to a boil and add salt and chicken essence to taste.

Then add peppercorns and carrot slices.

Stir well and add starch with water.

Remove from pan and plate.
