Sweet and sour hairtail fish

For the sweet and sour hairtail, I use a narrower hairtail, which is fried thoroughly and crispy to taste.

Clean the hairtail and set aside.

Heat oil and enlarge the material flap. Dip the hairtail fish in dry flour and fry in hot oil.

Fry the hairtail until golden and crispy, take it out and set aside.

Chop onion, ginger and garlic and set aside.

Prepare a bowl of sauce: soy sauce + vinegar + cooking wine + sugar.

Place the fried hairtail fish in the pot, add onions, ginger and garlic.

Cook in the prepared sauce.

Quickly stir-fry the hairtail until the flavor is fully absorbed.
