Wash the ribs, add appropriate amount of cooking wine, light soy sauce, dark soy sauce, salt, oyster sauce, and chicken essence, mix well, and marinate in the refrigerator for more than three hours

Prepare a fresh lotus leaf (you can use dried lotus leaves instead), wash them and blanch them in a pot of boiling water until they become soft and change color

Place the blanched lotus leaves in the steamer as shown in the picture. Note that the lotus leaves should be twice as large as the steamer

Wash the potatoes, peel them and cut them into pieces. Add appropriate amount of light soy sauce, a little salt and chicken essence and mix well

Spread the mixed potato pieces flat on the bottom of the lotus leaf steamer
