Cut the potatoes into very thin strips and soak them in water.

Cut the shredded potatoes into shorter lengths, add flour, eggs and appropriate amount of water and mix well.

Add some chopped green onion and salt.

Heat oil in a pan, use a spoon to put the mixed batter into the pan and fry over slow heat.
