Spicy pork knuckle has always been my husband's favorite. He came back today from a business trip for a week and must be tired of eating outside food. So I prepared the stewed pork knuckle that he likes to eat, but this time it was stewed with beer. It was spicy and chewy. I couldn’t help but eat several pieces while losing weight! Sorry, guilty!

pig trotter, about 1500g, washed and set aside

Put the pig's trotters in a pot under cold water, add onion and ginger, bring to a boil, take out the pig's trotters and rinse them clean.

Add cooking oil to the pot, heat it up and sauté the onions, ginger and aniseed.

Pour in the pork knuckles and stir-fry evenly, then add 5 tbsp dark soy sauce, 2 tbsp salt, 2 tbsp oil, 5 tbsp Huadiao wine, 2 tbsp Pixian bean paste, and stir-fry until the pork knuckles are evenly colored.

Pour in the beer, add 6 small pieces of rock sugar, and add one-third of the water as much as the beer. Bring to a boil over high heat and move to a casserole. If you don’t have a casserole, you don’t need to change the pot.

Simmer over low heat for 1 hour, then use high heat to reduce the juice.
