Fengsha Garlic Bones (non-fried version)
Overview
According to the definition of a famous seafood stall in Toronto, Jinsha is wrapped in salted egg yolk, Fengsha is wrapped in pure fried garlic, and Typhoon Shelter is fried garlic with black beans (or even rice fish). Since it is really difficult to make fried food at home, you have to wash it after cooking, and you don’t know what to do with the oil after frying. Inspired by a netizen who used a microwave oven to make fried chicken wings, I tried to use the oven to make this classic Cantonese dish, the garlic bone. Since this was my first time trying it, the finished product was a little overcooked, but I have adjusted the temperatures and times in the recipe below.

First mix the ribs with all the marinating seasonings and place in the refrigerator for at least 30 minutes, preferably overnight. Marinade: barbecued pork sauce/garlic powder/raw garlic/salt/honey/cooking wine/pepper (don’t ask me how much, Chinese food is all about two words: “appropriate amount”)
-
Using a eating bowl, stir together the raw eggs.
-
Using a saucer, mix together all the powdered coating ingredients. All-purpose flour, 1/2 cup cornmeal, 1/4 cup baking powder, 1 teaspoon sea salt, a pinch of black pepper, a pinch
-
On the other side, we line a baking sheet with a layer of foil and place a baking rack on top. Then dip the marinated ribs into the egg mixture, then into the breading powder, and then put them on the grill.
-
When laying out the ribs, we can preheat the oven to 420F/215C.
-
Place baking sheet in oven. The following is the time it takes for me to use spareribs (5-6cm long, average weight: about 50g) this time: a. Bake at 400F/205C for 30 minutes, heat to 520F/270C and bake for 10 minutes, turn over and bake for another 5-10 minutes (depending on the oven's ability to restore heat, and closely observe the degree of browning on the surface of the ribs)

The pork ribs are grilled at high temperature to preserve the meat inside, and sprinkled with some fried garlic, which will definitely give you a strong garlic aroma from the inside out.
