Fried river shrimp
Overview
Recently, there are a lot of small river shrimps sold in the vegetable market. All are fresh river shrimps. I bought some and fried them to give my kids calcium. Adding some corn flour will make it crispier when fried.

Steps
-
Live small river shrimps are cleaned repeatedly to avoid river sand. I washed it a dozen times.
-
Blanch the washed small river shrimps in boiling water until they change color and take them out.
-
Put it in a basket to control the moisture. Also allow to cool properly.
-
Pour the blanched river shrimp into a basin, add minced ginger, five-spice powder, pepper and salt and mix evenly.
-
Add flour and cornmeal.
-
Stir evenly into a relatively loose mass.
-
When the oil temperature is 40 to 50% hot, use a small spoon to dig into balls, fry them in the pan until they are set, take them out, and then check the oil temperature with 50% hot oil.

The fried shrimps are very crispy.
