Fish flavored tender tofu
Overview
This dish uses Japanese tofu, also called egg tofu. Although it is called tofu, it is actually not a soy product but made of eggs. It has a delicate and tender texture, but you need to be very careful when handling it because it is fragile.

Take the Japanese tofu out of the freezer and defrost it naturally for half an hour. Cut a strip of tofu into 5 pieces.

Tofu is coated in dry starch and fried in oil.

Fry until the skin is hard and crispy and the color turns yellow, take it out and set aside.

Chop ginger and garlic, and mince pickled pepper.

Mix sweet and sour sauce and set aside.

Heat oil in a pan and sauté minced ginger, garlic and pickled pepper until fragrant.

Add a little water and cook for 2 minutes, pour in the sweet and sour sauce, bring to a boil and cook for 1-2 minutes.

Thicken the gravy to collect the juice.

Pour the fish sauce over the tofu and sprinkle with green onions.
