Preparation: Wash the ribs; cut the green onion and ginger; weigh the rock sugar; mix the sweet and sour sauce thoroughly.

Pour an appropriate amount of water into the cooking pot, add ginger and green onions, and then add the ribs. After the ribs are cooked, remove and drain.

Heat the wok and pour more vegetable oil.

After the oil is hot, add the pork ribs and fry over medium-low heat.

After both sides of the ribs are golden, remove and control oil.

Turn on high heat and when the oil in the pot is 80% to 90% hot, pour in the spareribs and fry again.

When the pork ribs are fried until slightly charred on both sides, remove and control the oil.

Leave the base oil in the wok (or leave it out), add rock sugar and bring to a boil over low heat.

Boil rock sugar until caramel color.

Pour in the pork ribs and stir-fry until the pork ribs are evenly coated with the sugar liquid.

Pour in the sweet and sour sauce, stir-fry quickly, lower the heat, and slowly reduce the sauce.

After the juice is collected, sprinkle with cooked sesame seeds and turn off the heat.
