  1. Wash the wheat kernels and soak them in appropriate amount of water for 2 hours.

  2. Roll up the tofu skin and cut into shreds.

  3. Remove the chicken feet and buttocks from the old hen, put them into a pot, add green onions and ginger slices, add enough water to bring to a boil, skim off the foam, reduce to low heat and simmer for 2 hours.

  4. Let cool and shred the chicken.

  5. Remove the onions and ginger from the chicken soup, add wheat kernels and bring to a boil, then reduce to low heat and simmer for 30 minutes.

  6. Add salt, white pepper, thirteen spices, black bean soy sauce, shredded chicken and tofu skin and cook for 5 minutes. If you don’t like the dark color, you can add less soy sauce and more salt.

  7. Add appropriate amount of water to the flour and stir to form a flowable batter.

  8. Pour the batter into the pot and mix evenly, cook for 2 to 3 minutes, turn off the heat, pour in the beaten egg liquid and push evenly, add sesame oil and mix well, take it out and sprinkle with coriander.
