【Stir-fried wax glutinous rice】
Overview
Glutinous rice has always been my favorite fried rice, and there is no other one. To be honest, it should be my favorite about glutinous rice. Glutinous rice is rich in nutrients, replenishes qi, strengthens the body, and can stop sweating. It is a warming and strengthening food. Stir-fried glutinous rice with preserved meat is also the most common way to eat it. Stir-fry the fragrant Cantonese sausage, shiitake mushrooms and dried shrimps. Appropriate amount of light soy pepper and sesame oil to enhance the freshness and flavor. A bowl of fragrant and fragrant glutinous rice can’t be left out

Wash the dried mushrooms and soak them until soft. Wash the glutinous rice and soak it in water for about 2 hours. Remove the stems of the soaked mushrooms and cut them into shreds (do not throw away the water in which the mushrooms are soaked)

Slice or dice the sausage, prepare the peanuts, and soak the dried shrimps in water until soft

After the steamer is steamed, add the soaked glutinous rice and steam for about 20 minutes. Take it out (be careful of scalding, you need to use an anti-scalding tool)

Spoon an appropriate amount of peanut oil into the wok, stir-fry the peanuts over low heat until they turn brown (be sure to stir-fry over low heat to prevent the peanuts from burning) and set aside

Leave a little oil in the wok, add shredded shiitake mushrooms and fry until fragrant, then serve

Pour the sausage slices into the wok and stir-fry until translucent and shiny

Pour shredded shiitake mushrooms again, add soaked dried shrimps and stir-fry evenly

Pour the steamed glutinous rice into the ingredients, stir-fry quickly, add soy sauce, salt, and pepper

If the glutinous rice is lumpy, add an appropriate amount of water in which the dried shrimps and mushrooms have been soaked (do not add too much at one time to avoid adding too much water and the glutinous rice will become too soft)

Add chopped chives, add an appropriate amount of sesame oil, stir-fry quickly again and serve
