Boiled Chicken Slices
Overview
I don’t like pork, so I made the chicken version of boiled pork slices. It’s just as delicious~ My husband said it’s better than the one in the restaurant, and I’ll eat it more often in the future😇

The chicken is half thawed (it is difficult to cut if it is completely thawed)

Put it into a basin, add 2 spoons of cooking wine, 1/4 spoon of pepper, 1/2 spoon of salt and 1 and a half spoons of starch and mix well

Add 2 tablespoons of oil and mix well, marinate for 20 minutes

Boil water in a pot and add 1 spoon of salt

Add shredded tofu, bean sprouts and enoki mushrooms and blanch them separately, drain and spread on the bottom of a deep plate for later use (reserve the blanching water)

Heat a little more oil in a pan, add dry five-spice ingredients (peppercorns, bay leaves, cinnamon, grass fruits, star anise, etc.) and stir-fry over low heat until the five-spice oil comes out. Be careful not to burn it

Drain the dry ingredients and discard, leaving the five-spice oil at the bottom of the pot

Pour in the onion, ginger, garlic and dried chili pepper and sauté over high heat until fragrant

Add 1 spoon of Pixian bean paste and 2 spoons of spicy hot pot base

Fry the red oil

Pour in an appropriate amount of blanching water, not too much. Add 2 spoons of light soy sauce, 2 spoons of cooking wine, 1/2 spoon of sugar, bring to a boil over high heat, add appropriate amount of salt and chicken powder to taste

Pour in the chicken slices, spread them quickly with chopsticks, bring to the boil and remove from the heat

Pour into a deep dish

Sprinkle with coriander and white sesame seeds, drizzle with a little sesame oil
