Wash the chicken breast and cut it into small pieces, add light soy sauce, dark soy sauce, thirteen spices, and salt to marinate for a while (I finished cutting the rest of the vegetables while marinating the meat)

Cut green peppers, cucumbers, onions, green onions and ginger into cubes (as shown in the picture)

Blanch the dried chili segments in boiling water (it won’t become mushy when boiled), control the water, and put them together with the Sichuan peppercorns

King oyster mushrooms cut into pieces

Pour oil into the pot, when the oil is smoking, add king oyster mushrooms and fry until golden brown, remove and control the oil

After frying the king oyster mushrooms, fry the chicken. Add starch before frying the chicken (not too much, just two small spoons is enough)

Leave some oil at the bottom of the pot (less oil), first simmer the dried chili segments and Sichuan peppercorns, then add ginger, onions, and scallions and stir-fry until fragrant. Add chicken, king oyster mushrooms, cucumbers, and green peppers. Stir-fry for a few times. Add light soy sauce, thirteen spices, and salt (these seasonings are omitted when salting the meat, so there will be very little). Stir-fry for a few times and prepare to serve. When the pan is finally out, add chicken essence and MSG (I forgot to take photos during the stir-frying process)
