Eight-treasure Rice
Overview
Every year during the Chinese New Year, eight-treasure rice is always served on the first and second days of the lunar month. The eight-treasure rice has a sweet taste and symbolizes treasures from all directions, so whether you are eating at home or having a dinner party in a hotel, this eight-treasure rice is a must-have sweet dish. Because the elderly in my family cannot eat in hotels, we cook the New Year’s Eve dinner at home on the first day of the Lunar New Year. I also showed off my cooking skills and made eight-treasure rice for my family. The response has been good. The slightly improved eight-treasure rice tastes very good.

Soak the glutinous rice in water a day in advance, and use more water to avoid insufficient water after the rice swells

Pour off the water in the rice (don’t pour out all the water, leave a little), spread the rice on a drawer cloth and steam for 40 minutes

While the steamed rice is still hot, add sugar and butter and mix well.

Soak lotus seeds in advance

Cut off both ends of the red dates, remove the core, and stuff the lotus seeds into the dates

Also prepare the dried cranberries. Raisins, hawthorn cake and pineapple preserves. I make the hawthorn cake and pineapple preserves myself, so feel free to eat them

Take a bowl of suitable size, brush it with a layer of oil, then place red dates, raisins and cranberries on the bottom

, and then spread a layer of rice on top. On top of the rice, place dates stuffed with lotus seeds around it, then put pineapple preserves on top, and place hawthorn cake dices in the middle

Cover with another layer of rice, and place the remaining chopped dates on top of the rice

Surround the edges with orange slices, flip the rice pudding upside down and serve
