Old Beijing Fried Noodles
Overview
Old Beijing Zhajiang Noodles is a traditional and classic noodle dish. Cut or boil cucumbers, Chinese toon, bean sprouts, and soybeans and prepare them into dishes. Then add pork belly slices, sweet noodle sauce, and yellow sauce to make it. A bowl of cold, boiled hand-rolled noodles with soybean paste is a regular at the summer dinner table.

Cut the pork belly into small cubes and marinate with cooking wine, peppercorns, salt, etc. for preparation.

Mix dry yellow sauce and sweet noodle sauce together, mix with water and set aside.
