Sweet potato yellow clips, as the name suggests, are yellow clips made of sweet potatoes. They are a famous snack in Wengyang Town, Yueqing City, Wenzhou, my hometown. The outer skin is made of cooked sweet potatoes and sweet potato flour and made into a dough. The filling is stir-fried with pork, pickles, etc., then wrapped and steamed. The outer skin is elastic and soft, and the filling is salty and delicious. It is very popular.

First prepare the sweet potato flour for making the dough

Wash the sweet potatoes, peel them and cut them into small pieces. Steam them in a pot over water until tender

Pour the cooked sweet potatoes onto the sweet potato flour while they are still hot

Then prepare the filling, add a little cooking wine, salt, ginger slices, onion knots, and water to the fat and lean pork and cook it through the pork.

Heat oil in a pan, add diced pork and stir-fry until oil comes out.

Take a small piece of dough and use a rolling pin to gently roll it into a piece of dough the size of a dumpling wrapper. The thickness is a little thicker than the dumpling wrapper. If it is too thin, it will easily crack.

Take an appropriate amount of filling and wrap it into the dough. Be gentle when wrapping, and stick the front and back dough together to form a crescent shape

When steaming, first smear a layer of oil on the steamer, then put it on to steam, leaving a little space between each one to prevent sticking. Freshly cooked ones only need to be steamed for 5 to 8 minutes, while those that have been frozen in the refrigerator need to be steamed for 10 to 15 minutes
