Cold yam balls (delicacy of Bameng region, Inner Mongolia)
Overview
I remember that when I was in college, there was a snack called yam pills. We all loved to eat it in the dormitory, and the taste was unforgettable for a long time. Unfortunately, when I came to Beijing to work, I couldn't eat this taste anymore. Now I am very lucky to find a Bameng in-law. Yam balls are a special snack of Bameng. They are actually shredded potatoes wrapped in noodles and steamed. They can be fried or eaten with stuffed skin soup. Different ways of eating them have different tastes. I remember that the first time I entered my mother-in-law’s house, my husband asked her to make this Bameng snack that I still remember so vividly. It brought back the feeling of eating together with my roommates at school! Nowadays, I love eating this even more during pregnancy, and even bring it to my sister-in-law who is also pregnant. We all know that pregnancy reactions are very painful, but this one makes us eat it beyond words! What you eat is an appetizer to relieve your resentment! Now let me introduce this refreshing, delicious and non-greasy snack. I asked my mother-in-law to make it and I will take the photos, haha~ The following food intake is for the five of us.

Ingredients
Steps
-
Cut the radish and cucumber into shreds.
-
Sprinkle the shredded cucumbers and radish with salt and wait for the marinating water to drain.
-
After frying the sesame and peanuts, let them cool and crush into sesame and peanut crumbs. (I have fried peanuts before. You can use them or not according to your taste. I like the aroma of sesame and peanuts)
-
Grate potatoes into shreds
-
Sprinkle an appropriate amount of white flour on the shredded potatoes and stir evenly. Add a small amount of white flour and observe while stirring to make sure that every shredded potato is evenly coated with white flour.
-
Mixed shredded potatoes (too much flour will cause them to break into pieces, too little flour will cause the potatoes to stick together, which affects the taste)
-
.Put the mixed shredded potatoes into the pot and steam for about 10 minutes
-
While the shredded potatoes are steaming, start picking the cold vegetables. Pour in an appropriate amount of vinegar, light soy sauce, shredded green peppers, and coriander.
-
Put the wok on high heat and pour in the salad oil, fry the chopped green onions until golden brown, then quickly add the peppercorns and sesame seeds. Pour the simmered scallion oil onto the cold vegetables while it's still hot. (Yam balls are very oily, so you need to add more oil to the scallion oil so that they taste better)
