I have always been motivated to be a happy fat man, but I am so busy with worldly affairs that cooking even once has become a luxury. Without further ado, today I will introduce to you a Shaanxi-specific noodle dish called "Ma Shi". When fried, it is both a vegetable and rice.

Prepare minced onion, ginger and garlic, set aside.

Cut the cucumber, black fungus, ham sausage, and shiitake mushrooms into 1cm-sized cubes and set aside

Crack the eggs into a bowl and set aside

Cut leeks into 1cm pieces and set aside

Cook the sesame seeds until they are medium-done, drain them in cold water and set aside

When hot, fry the beaten eggs and set aside. When frying eggs, use more oil to make the scrambled eggs fluffy.

Heat the oil with scrambled eggs and sauté minced onions, ginger, garlic, and dried chili peppers

Add diced vegetables and stir-fry for one minute

Add sesame seeds and stir-fry for 3 minutes, depending on personal preference. I like my stir-fry to be dry, so the stir-frying time can be extended appropriately

Add dark soy sauce for color, use oil to enhance the flavor, stir-fry evenly and then add minced garlic. This step must not be omitted to enhance the freshness

Add leeks and chicken essence, stir-fry evenly and serve
