This dish is an indispensable stir-fry dish at our local banquets and has its own unique taste. It is the first to be eaten every time, especially its soup, which is a pleasure to eat with rice.

Wash the bean sprouts, onions, garlic sprouts and ginger, cut the onions and garlic sprouts into sections, slice the ginger, and cut the meat into shreds and set aside.

Add the fat to the pot and stir-fry until the lard comes out.

Then add lean meat, ginger slices, dried chili peppers and Sichuan peppercorns and stir-fry until fragrant.

Add bean sprouts and stir-fry to remove moisture. (If there is less oil, you can add blended oil).

Stir-fry the bean sprouts until they are mature, add Laoganma, bad chili pepper, soy sauce, balsamic vinegar, chicken essence and garlic sprouts to taste.
