Overview
It's not as delicious as noodles. What I like to eat the most is hand-rolled noodles. The noodles I roll myself are chewy and delicious. Coupled with pork belly meat sauce and fresh vegetables, the nutrition, texture and taste are all excellent. . . . Haha The weather is hot, it’s really enjoyable to have a bowl of noodles like this.

Prepare 150 grams of flour.

Put the flour into the bread machine, first add 50 grams of water to start the kneading process. After the dough is formed, press the dough with your hands to test the softness and hardness of the dough. Then slowly add the remaining liquid and knead the dough into a smooth and slightly hard dough. Place it in a basin to rest for 20 minutes.

Fold the dough into an S shape and cut into equal-width noodles with a knife.

Ingredients for alfalfa meat sauce: hand-made noodles, alfalfa, pork belly, garlic, green onions.

Cut the pork belly into small cubes and chop the onion and garlic.

Place the hand-rolled noodles into a pot of boiling water, cook, remove and cool, and set aside.

Blanch the alfalfa in boiling water, drain it into cold water and set aside.

Add cooking oil to the pot, add diced pork belly and stir-fry.

Stir-fry the diced meat until it changes colour, add minced garlic and stir-fry until fragrant.

Add 100 grams of water, bring to a boil, add light soy sauce, dark soy sauce, salt, and sugar. Turn off the heat after the juice is reduced.

Put the noodles into a plate, spread the meat sauce and soup on top of the noodles, sprinkle with green onion leaves, and place alfalfa on the side.
