Black bamboo shoots and dried meat buns
Overview
My sister sent a big bag of dried black bamboo shoots from Sanming. The dried bamboo shoots were dried by my good friend who lives in the mountains. They have no preservatives. A big bag was divided among the three of us, my sister and my brother. Today is the first time we made it and ate it. Dried black bamboo shoots are boiled with meat as standard and made into steamed buns, very delicious!

Put the baking powder into warm water to dissolve it,

Pour the warm water into the flour slowly, stirring with chopsticks while pouring,

Knead into a smooth dough, cover with plastic wrap and leave in a warm place to ferment.

Chop the dried black bamboo shoots, rinse and drain

Wash the pork belly, peel and chop into pieces,

Heat oil in a pan, add minced ginger and green onions and stir-fry until fragrant,

Add the diced pork belly and stir-fry until it changes color, add salt, sugar, cooking wine, dark soy sauce, pepper, stir-fry evenly,

Add 1 bowl of water and bring to a boil over high heat,

Add the dried diced black bamboo shoots and stir-fry evenly, bring to a boil over high heat,

Simmer over low heat for 10 minutes, reduce the juice over high heat, add some chicken essence, sesame oil and stir-fry evenly, the black bamboo shoots and dried meat filling is ready.

Sprinkle some flour on the cutting board, put the dough on it, knead it evenly after deflating, divide it into equal small doughs, and let it rest for 15 minutes.

Roll out the dough into a medium-thick dough with four sides,

Add an appropriate amount of black bamboo shoots and dried meat stuffing, wrap it into buns, cover it with plastic wrap and let it rest for 20 minutes. Don’t forget this step.

Brush the steamer with vegetable oil, put in the steamed bun embryo,

Pour cold water into the pot and steam over high heat for about 8 minutes.

Change to medium-low heat to steam for 6 minutes, turn off the heat, and simmer for 3 minutes.

Attached is a picture of soaking dried black bamboo shoots. Dried black bamboo shoots should be prepared 3-4 days in advance, soaked in boiled rice water, and change the water once a day.

Then use a pressure cooker, cook on high heat until it reaches the boiling point, reduce heat to low for about 20 minutes, let cool, then slice and cook.
