Mushroom Beef Fried Noodles
Overview
The god of cold noodles lies in vinegar - China's vinegar depends on Shanxi, and Shanxi's vinegar depends on Qingxu. But everyone knows Qingxu mature vinegar, but some people know that there is another kind of vinegar in Shannan - rice vinegar. I remember when I was a kid, lunch at home was often noodles. Grandma was making noodles with a big knife in the kitchen. The noodles were as wide as her fingers and rolled out to be thin and tough. When the noodles were put into the pot, they were cooked as soon as they were rolled. Grandma picked up the noodles and drained them with cold water. Grandpa and dad each hold a big bowl, a chopstick of noodles, a little salt, a little oil, and finally a little rice vinegar. The smell makes me drool just thinking about it! The men ate so vigorously! A bowl of noodles seemed to pass through my mouth and go straight into my stomach. When I grew up, I often ate all kinds of noodles, some with red oil and some with dry mixture, but the ones I grew up with were the ones made by my grandma. What I miss most about grandma’s noodles is the vinegary taste!

Break off the rapeseed leaves one by one and wash them

Soak the mushrooms and dice them, and dice the beef, onions, garlic and ginger

Put more oil in the pan, when the oil is hot, add beef and stir-fry

Stir-fry for 1 minute, add diced mushrooms, onions, and minced garlic and continue stir-frying

Add bean paste, soy sauce, sweet noodle sauce (if any) and continue to stir-fry

Stir well and remove from the pan

Add an appropriate amount of water to the pot, add noodles after boiling, and stir in time. After the water boils again, add a small amount of cold water, boil again, add the rapeseed, cook for a while and remove from the pot.
