Cordyceps, Yam and Pork Ribs Soup
Overview
Autumn and winter should be the time to nourish yin and nourish the lungs. Cordyceps flowers are suitable for making soups and cooking. Cordyceps flower is not a flower of Cordyceps sinensis, it is just a fungus. Just like the mushrooms we usually eat, they are very common, but just because they are called Cordyceps flower, they think they are very precious. Some people are even reluctant to wash them, thinking that the powder will be washed away. However, Cordyceps flowers are indeed very delicious, and are very good for making soups and cooking. Cordyceps flower has no insect body, only orange-yellow grass, but its effects are similar to that of Cordyceps, which can nourish the lungs and kidneys, protect the liver, nourish yin and skin, and improve immunity. I prefer to use it to make soup, it is very fresh, sweet and delicious. Huaishan: strengthens the spleen and stomach, nourishes the lungs and relieves coughs, lowers blood sugar. Codonopsis pilosula: produces fluids and quenches thirst, lowers blood pressure, nourishes blood, and replenishes qi. Lycium barbarum: improves eyesight, nourishes blood, lowers three highs and resists aging. Red dates: replenishes qi, nourishes blood and calms the mind. Corn: nourishes the lungs and calms the heart, strengthens the spleen and appetizers, dilutes water and relieves stranguria. This soup is suitable for people with weak spleen and stomach!

Ingredients
Steps
-
Wash the ribs and boil them in boiling water for 2-3 minutes to remove the blood foam. Blanch the green onions in boiling water and tie them until they are knotted. Set aside. (I forgot to take pictures earlier, so I took some pictures from Baidu to make up for it! I’m really sorry)
-
Use a wok, heat oil, add ginger, add pork ribs and stir-fry for a while, add boiling water! (Stir-fry and add boiling water and the soup will turn white!) Pour into the soup pot (I use an induction cooker and cannot use a casserole. In fact, it is best to use a casserole!)
-
Pour into the soup pot and add: Codonopsis pilosula, wolfberry, red dates, green onions. After simmering on high heat for 20 minutes, turn to low heat and simmer slowly. (I use an induction cooker, so select high heat first, and then turn to the soup button)
-
Take advantage of this time to wash the yams, soak them in cold water and set aside for later use (I just ask the boss to peel them when I buy vegetables at the vegetable market, and just wash them when I come back.)
-
Soak the Cordyceps flowers in cold water for 10 minutes.
-
Wash the corn and set aside
-
Cook the soup for an hour
-
Add corn, yam, cordyceps flowers, and continue to simmer for half an hour!
-
Add a little salt and turn off the heat!
