350g plain flour, add 150g low-gluten flour. 285 grams of warm water, add 3 grams of yeast. The finished product is 18 buns, with enough vegetable filling for 6 or 7 buns left.

Cut the pork with a fat-to-lean ratio of 3:7 into small pieces (97 grams of fat and 260 grams of lean). Heat the cold oil in the pan, first add the fat meat and stir-fry to release the oil, then add the lean meat and stir-fry until the lean meat changes color. Add 1 spoon of cooking wine and 1 spoon of soy sauce, then add 30g of sweet noodle sauce and stir-fry evenly to reduce the juice.

Shred 690g white radish, add 4g salt, mix well and wait for 10 minutes.

Squeeze out 128g of water from the radish. After squeezing out the water, the shredded radish weighs 560 grams.

Steam the buns until they are light enough to hold in your hand. Boil the water in the pot. After the steam is released, turn down the heat and keep steam overflowing. Steam for 15 minutes.
