Stir-fried geoduck slices with pickled vegetables and spring bamboo shoots
Overview
I went to the seafood market today and saw baby geoducks on sale for 48 yuan each. I had never made one myself, so I decided to buy one and take it home to try it out! When I went home and cleaned it, I was dumbfounded. The internal organs inside took up half of the weight, and in the end, only a little bit of the sliced meat was left! Usually geoduck is used for sashimi or porridge. I thought the amount was too small, so I decided to fry it with some pickles and spring bamboo shoots!

The little geoducks I bought back

First remove the outer shell

Even if the internal organs are removed, this one is too big!

Boil water in a pot, add washed geoducks and cook for 10 seconds

Tear off its outer skin

Slice the geoduck into thin slices. This is sashimi, which can be dipped in wasabi soy sauce and eaten

Marinate with cooking wine and salt for a while

Blanch spring bamboo shoots and cut into thin slices

Cut into minced ginger, minced garlic and dried chili segments

Heat oil in a pan and sauté garlic, ginger and chili until fragrant

Add pickles and stir-fry

Add some salt and sugar to taste
