Overview
Fried fish is indispensable during the Chinese New Year. All kinds of fish and hairtail must be prepared. Once guests come to the house, you can pick them up and serve them, saving time and effort. In my memory, all the hairtails I have eaten were frozen. Although I was at the beach, I have never seen fresh hairtails. I remember that hairtails were mostly eaten fried. Of course, they were also stewed and braised. I always felt that it was better to eat fried hairtails because of the many thorns.

Take the hairtail out of the refrigerator and defrost it at room temperature

After thawing, cut into 7-8 cm long segments.
