Prepare 8 fresh prawns.

Wash and remove the heads, pick out the shrimp threads with a toothpick and wash them with running water.

Cut the shrimp sideways with a knife without cutting through.

Sprinkle cornstarch on chopping board.

Coat each shrimp with starch.

Use a rolling pin to lightly pound into thin slices.

Pound each shrimp until paper-like and transparent.

Put them on the plate first.

Wash the green onions and coriander and cut into pieces.

Take a small bowl, add salt, pepper, and chicken essence, then tear the seaweed into small florets and put it in.

Add water to the pot. After the water boils, shake off the starch on the shrimp slices and put them in.

Turn off the heat when the shrimp chips turn red.

Pour a ladleful of the shrimp cooking water into the mixing bowl and stir evenly.
