Chasing the chicken shredded cold noodles in my memory

Overview

It’s been a long time since I made some innovative and thoughtful dishes. I don’t know whether it’s the busy life in 2019 or the busy heart. It’s always easy to lose interest and suddenly lose direction🧭 I have traveled several times this year. No matter how beautiful the scenery is when I am outside, I miss it🏠. I miss the taste of home and the nostalgia... It coincides with Xiansen’s birthday, and my little ancestor doesn’t like to eat braised noodles. I started to think about the smell in my childhood memories. I actually forgot the name of that store because it closed not long after I graduated from high school. But just because it was gone, the deliciousness of the original shredded chicken cold noodles has been in my memory for a long time... I didn't have much pocket money at that time. It was about 1999 and 2000, and it was 8 yuan a serving. For me, a student, it was definitely a luxury. The environment of the store is very good, spacious, bright and quiet. I often order cold noodles and sit for an hour or two in the afternoon when I skip class. Listening to the 🎵 in the store, I felt like I was a teenager

Ingredients

Steps

  1. This is the main ingredient. Peel the cucumber and hand-roll the dough. I like round and thin ones.

  2. Cut the chicken breast into small pieces along the grain, do not cut off. Pour cold water into the pot, add scallions, ginger slices, and peppercorns. After the water boils, turn to medium heat and simmer for 5-6 minutes, cover and simmer for 10 minutes. Remove from the pot, wash and cool, then shred the chicken! Don’t take it too much trouble, this is the soul of this dish😂 I am entertaining myself by listening to Jay Chou’s Daoxiang.

  3. This is a picture of the finished product after shredding. The cucumber seems to be a little missing. Blanch the carrot shreds in a pot of boiling water, take them out and cool them down and set aside.

  4. How many spoonfuls of sesame paste you take depends on how many people in your family will eat it. Do not use water to purge, please use a mixture of light soy sauce, vinegar, and sugar in a ratio of 1:1.2:1! This is the most important thing! During this period, add appropriate amounts of salt and chicken essence, and you can taste it yourself. Increase or decrease appropriately.

  5. This is my favorite at home, so friends who don’t like spicy food can ignore it. If you don’t know how to cook it or you don’t want to bother to buy the finished product, you can also buy it. I recommend Momo, but I don’t recommend Lao Ganma for this dish. It will skew the flavor. All that’s left is to cook the noodles, remember to put them in cold water! Cool thoroughly to control dryness! ! ! ! ! Mix in a little oil and mix well! If the noodles are not dry, there will be too much moisture, which will affect the taste!

  6. This is a picture of my daughter's finished product. Before pouring the sesame sauce, she sprinkled with chopped chives, minced garlic, and peanuts (I forgot to smash them). Of course, in my case, two tablespoons of oily chili peppers are indispensable.
