Thousand layer sauce pancake
Overview
When I used to work out of town, I would pass by a breakfast shop every day and get a piece of Thousand Layer Pancakes with Sauce-flavored Pancakes and Soy Milk. Today I tried making it at home and it tasted pretty good, with crispy layers and a rich sauce flavor.

Take 250g of flour and put it into a basin, add appropriate amount of salt to taste

Add an appropriate amount of warm water (the cake made with warm water and dough will not taste so hard)

Knead the dough until it is smooth, then cover it with a damp cloth and let it rest for 10 minutes

Next, make the sauce: Pour cooking oil into the pot. Add scallions and stir-fry

Then add bean paste and oil and stir-fry

Add appropriate amount of water,

Cook until thickened, stir in chopped green onions and serve

Take a small bowl, pour in cooking oil, then add a little of the sauce you just cooked, mix well to make chili oil and set aside

Use a rolling pin to roll the rested dough into a rectangle about 3 cm thick

Brush with the spicy oil from step 8

Fold the dough in half

Brush spicy oil on the joints of the dough

Then continue to fold up and down

After folding in half, turn the dough over (the folded side faces down)

Brush with spicy oil again

Then fold it in half

Roll up the dough from one end

The roll at one end is usually rolled up from the other end, like this

Stack the two ends together and flatten

Use a rolling pin to roll into dough

Put the rolled out pie crust into the pan and bake until both sides are golden brown

Just brush on the sauce you made earlier
