Fried lotus root cake
Overview
When I was little, Sister Xiao would stew lotus root soup at home every now and then. It is a Hubei specialty. Although I occasionally come here to miss the taste of that time, I always feel that something is missing. Maybe my parents are missing. In fact, when I go to the vegetable market, I am an acquaintance. Every time I go, everyone will say hello. So even if there is no shortage at home, I will buy something. Unknowingly, I have a lot of meat at home. The final solution is that I just have two sections of lotus root. So I just thought about frying some lotus root cakes and cleaning out the refrigerator

Ingredients
Steps
-
Remove the skin from a large section of lotus root, wash and set aside
-
Fatty and lean meat is best. Chop it into minced meat. A meat grinder will save trouble. But I am a pretentious person and I like to chop it by hand
-
The same goes for lotus root, chopped into small pieces
-
Cut green onions into sections and soak in three tablespoons of water for about ten minutes
-
And squeeze out the juice with your hands to make chive water
-
Put the meat filling into a slightly larger container and wait for it to be easily stirred. While stirring, pour in the chive water [slowly allow the meat to absorb the water and then add it]
-
Depending on the amount of meat, add egg whites. I didn’t have much stuffing today, so I added one-third of the egg whites and then used my hands to stir from the bottom until the meat absorbed the egg juice
-
Pour the lotus root seeds into the meat and mix well with your hands
-
Add appropriate amount of salt, light soy sauce, dark soy sauce and black pepper
-
Finally, add corn starch, mix well and marinate for a while until the flavor is absorbed. When stirring, remember to stir clockwise until the meat becomes gelatin
-
I originally wanted to make it round, but being a Virgo, I decided to use a mold, so use whatever shape you have at home
-
Heat the pot, add an appropriate amount of oil, remember not to use too much, just drop in the meat patties one by one, fry over medium-low heat for a while until the meat patties can be moved easily with a spatula, shake gently
-
Fry one side until golden brown. Just remember to flip it over. If the meatloaf you make is relatively thick, then pour in an appropriate amount of hot water after frying it, but not too much. Cover and simmer for a while and then remove from the pan
-
After taking it out of the pan, I sprinkled some shredded seaweed for decoration

You won't be able to stop after one bite, especially if you have children, you can try it
