Cut the tofu into 2-3 cm square and 1-2 cm thick pieces. Let it dry slightly, or wipe off the surface moisture with kitchen paper.

When the wok starts to smoke, pour in twice as much oil as you normally would for cooking. Heat the pan with cold oil, put the tofu cubes in, turn on low heat, and shake the pan while frying so that the tofu does not stick to the pan.

Flip until one side is lightly browned. After both sides are cooked, use a spatula to push to the edge of the pan to control the oil.

Put it into a bowl and fry it in a pan. I fried two pieces of tofu for 4 pots.

Leave the base oil in the pot, add Sichuan peppercorns, aniseed, peppercorns, break up the dried chili peppers and stir-fry until fragrant, then add soy sauce and vinegar. Stir-fry briefly, add water, salt, ginger slices, green onions, add tofu, bring to a boil over high heat, and simmer for 10 minutes to add flavor.
