Ingredients: Beef tendon, Pixian bean paste, green onions, ginger, hawthorn slices, cinnamon, cloves, peppercorns, aniseed (that is, star anise).

Soak beef tendon in water for about 4 hours to remove blood. Then add cold water to the pot, add the beef tendon, boil until the water boils and skim off the floating residue, and cook for another 5 minutes. When the beef tendon is cooked, turn off the heat and clean the beef tendon with water.

Cut green onion into sections and slice ginger.

Put the beef tendon meat in the pressure cooker, add water level with the beef, add hawthorn slices, cinnamon bark, cloves, peppercorns, aniseed, and turn up the heat.

Add cooking wine, light soy sauce, dark soy sauce and Pixian bean paste, then add salt, cover the pot, and put on steam for 25 minutes.
