Onion twice-cooked egg
Overview
I bought two purple-skinned onions, very purple ones. The boss said that these onions are more delicious than ordinary ones. There’s nothing good to stir-fry with at home, so I’ll just use eggs. However, instead of using raw eggs to stir-fry, we use poached eggs to stir-fry in a wok, which is more salty and fragrant than the usual fried eggs with onions and goes well with rice.

Cut onions into cubes evenly, wash and mince coriander

In an empty bowl, add half a spoonful of cooking wine, a spoonful of light soy sauce, a half spoonful of steamed fish soy sauce, a little sugar, and stir evenly

Heat oil and fry eggs

Sprinkle some salt and pepper on each egg

Fry until both sides are browned and the yolk becomes hard

Use a shovel and chopsticks to divide into pieces and serve

Leave the base oil, add onion pieces and stir-fry

Sauté until onions become soft, add egg cubes

Pour in the seasonings and stir-fry

After the juice is reduced, sprinkle with chopped coriander
