Homemade Malatang
Overview
I love spicy food. As a daughter-in-law from Sichuan, chili peppers are indispensable on my family’s dining table. Malatang is something I often like to eat. It’s simple, hygienic and economical to make by yourself. You can also mix it by yourself

Ingredients
Steps
-
Wash and cut the ingredients you are going to use and set aside
-
Add an appropriate amount of oil to the pot, sauté the onion, ginger and garlic until fragrant and add a spoonful of bean paste
-
Stir-fry the bean paste until fragrant
-
Add a small spoonful of light soy sauce, cooking wine, oyster sauce, a pinch of salt to taste, and finally add a bowl of water and bring to a boil
-
Start blanching the baby cabbage
-
Blanch the potato slices. If you like them crispier, you can control the blanching time for a short time. It is recommended to cut the potatoes into thin slices
-
Finally, scald the duck blood (the duck blood I bought is ready-cooked semi-finished product, and I boil it a little)
-
Put all the cooked vegetables on a plate, add cooked duck intestines, sprinkle with chili pepper, pepper noodles, chili powder, minced garlic, sesame seeds, and chives
-
Add an appropriate amount of oil to the pot and heat until it smokes
-
Pour the hot oil into the bowl, and when you hear the oil sizzle, the aroma comes out
-
Finally, just add some chicken essence and sprinkle with coriander (chicken essence is not suitable for high-temperature cooking, so I just add it in the end to adjust the flavor)
