Cut the three-yellow chicken into small pieces and clean

Spice bag: 1 small handful of dried chili pepper, 1 small handful of Sichuan peppercorns, 2 star anise, 2 sections of cinnamon bark, three or four bay leaves, 1 small handful of fennel (if you can eat spicy food, add more chili peppers and Sichuan peppercorns)

Cut green and red peppers and onions into small pieces and set aside

Marinade juice: Add appropriate amount of Huadiao wine to the onion knots and ginger slices, squeeze out the onion and ginger juice, and set aside

Add a spoonful of salt and marinade to the chicken, pick it up with your hands for one minute, and marinate for ten minutes

Make base oil in the pot, the oil should be wider

Add the green onion and ginger slices under the cold oil, then add all the spices in sequence, and stir over low heat until fragrant

After frying the spices, pour in the marinated chicken pieces. When frying the chicken pieces, add a little water or cooking wine from time to time, so that the chicken pieces will be tender when fried to prevent dry-fried chicken pieces. Then add 2 spoons of fried sugar color, 1 spoon of dark soy sauce, 1 spoon of light soy sauce, and 1 spoon of Sichuan pepper powder to fry the chicken pieces thoroughly

After frying the chicken pieces, add beer just enough to cover the chicken pieces. Then add potato cubes and a small handful of garlic cloves and bring to a boil over high heat, then reduce to low heat and simmer for 20 minutes

After twenty minutes, turn to high heat and start to reduce the juice. When the juice is almost reduced, add 1 spoon of pepper, 1 spoon of chicken powder and an appropriate amount of salt. Add green and red peppers and onion pieces and stir-fry until raw. Finally add 1 spoon of chili red oil and stir for a few times. The red oil is chili oil (add onion, ginger, pepper, star anise, cinnamon and bay leaves to rapeseed oil, fry until fragrant, then remove and discard, then pour hot oil into the chili noodles in batches to make red oil)
