Cut the pork ribs into sections, wash them, put them in a pot with cold water, and blanch the pork ribs. Remove and wash the blanched pork ribs.

Prepare ginger, onions, garlic, star anise, cinnamon, and bay leaves.

Pour half the spatula of oil into the pan, and when the oil is hot, add the ingredients ginger, onion, garlic, star anise, cinnamon, and bay leaves, and sauté over high heat until fragrant.

Pour in the blanched pork ribs, stir-fry over high heat until slightly browned, and the ingredients are fragrant. Dish out and set aside.

Wash the pot, heat the pot, pour half the spatula of oil, and when the oil is hot, pour in 2.5 tablespoons of rock sugar.

Over medium heat, stir the rock sugar and cook until it melts into brown color (remember to stir constantly, otherwise the sugar will burn).

Pour in the fried pork ribs and coat the pork ribs with sugar color over medium heat.

Pour in half a bowl of water until most of the ribs are covered (it will make it easier to cook until thickened). Add 1 spoonful of cooking wine, cover the pot and cook over medium heat for 10 minutes, turning the ribs after 5 minutes. Turn up the heat to high and stir-fry the pork ribs until the sauce thickens. Pour 2 tablespoons of white vinegar along the edge of the pot and spread the sauce all over the pork ribs over high heat.

Transfer to a plate, sprinkle with white sesame seeds, the sweet and sour pork ribs are ready to serve!
