Chop the pork belly into a container and set aside.

Prepare the sauerkraut and wash it twice with warm water.

Prepare chicken stock, scallions, onions, and ginger and chop them into pieces

Prepare star anise and peppercorns

Heat oil in a pan, heat the oil to 70%, add star anise, peppercorns, and a small amount of green onions and stir-fry until fragrant.

Place the scallion oil in a container to cool.

Chop the sauerkraut, and mix the onion, ginger, chicken essence and meat filling.

Pour the cooled oil into the meat filling and stir evenly in a clockwise direction.

Add sauerkraut to the mixed meat filling and stir clockwise until evenly mixed.

Wrap the meat filling into the dumpling wrapper.

The wrapped dumplings are cooked in the pot.
