Stir-fried minced pork
Overview
Yesterday when I was shopping for vegetables, the proprietress of the vegetable shop urged me to buy corn, saying it was sweet, tender and delicious. Although I don't like eating corn very much, I was still kind enough to buy a few corns. When I got home, I was thinking about how to eat it. I don’t like to eat boiled corn, so I happened to see some fried peas left. Then use corn kernels, peas, carrots and minced meat to make stir-fried peas. It is simple to operate, has a good color combination, balanced nutrition, fresh and delicious, refreshing and delicious.

Steps
-
Let’s take a family photo first: two corns, a small piece of carrot, a small bowl of leftover fried peas (I can use fresh tender peas), 80g of pork shank, a few spring onions, a small piece of ginger, and a few cloves of garlic
-
I cut the pork into minced meat. I didn’t chop it. I cut it into small pieces, which gives it a better texture
-
Add a little light soy sauce, a little cooking wine, a little ginger powder and white pepper powder, a little cooking oil to the minced meat, stir evenly, then add a little cornstarch, mix well and marinate
-
Peel off the corn kernels, wash and set aside, peel and wash the carrots, select and wash the shallots, peel and wash the ginger, peel and wash the garlic and set aside. (The method of peeling corn kernels is very simple. Stand the corn upright and split it in half from the middle with a knife, and then peel it off one by one along the vertical rows of corn kernels.)
-
Chop the shallot into mince, mince the garlic into mince, mince the ginger into mince, set aside
-
Dice the carrots and set aside
-
Heat the pan with cold oil, add the minced meat and stir-fry until the minced meat turns white and shredded, then take it out and set aside
-
Heat the oil in the pot. If it is not enough, add a little more oil, add minced ginger, minced onion, minced garlic, and stir-fry
-
Add carrot cubes and stir-fry
-
Add the young corn kernels and stir-fry for two minutes. If the corn kernels are older, blanch them in water for a minute or two before frying.
-
Add appropriate amount of salt and stir-fry
-
Add a little sugar to make it fresh,
-
Add the shredded minced meat and stir-fry
-
Add the leftover peas from yesterday, stir-fry evenly, add a little chicken essence, and serve. These peas are the leftovers I had yesterday, so I added them last. If they are raw peas, you can add them after the carrots
