Braised Hoof Pork

Pig's trotters are the upper part of pig's legs, and some people also call them pig's trotters. The preparation of trotters is usually sauce-based or marinated. Red Braised Hoof Pork is cooked using a braised method. The color of the finished dish is maroon, so it is called red braised trotters. The taste of the dish is soft and glutinous, and the aroma is rich.

Soak the pig's trotters in clean water for about 2 hours to remove the blood. After soaking the hooves, add water and tangerine peel to the pot and soak for more than 30 minutes. Wash the soaked hooves and put them into the pot soaked in tangerine peel. Bring to a boil and cook for about 2 minutes before turning off the heat.

At the same time, prepare the old soup, aniseed, cinnamon, green onions, and ginger slices.

Wash the cooked hooves again with water. Fry the sugar color: Put an appropriate amount of oil in the pot, add rock sugar, and fry over low heat until it turns brown. Add the washed hooves and stir-fry repeatedly to make the skin color.

When the skin of the hoof is colored, add aniseed, cinnamon, green onions and ginger. After stir-frying evenly, add an appropriate amount of bean paste and continue stir-frying until the sauce is evenly coated on the hoof.

Add old soup. After boiling, skim off the foam and add salt to taste.

Simmer over low heat for about 90 minutes. During this period, the hoof should be turned three times to ensure the flavor.
