Steps
-
Put the medium dough ingredients into the bread machine in the order of liquid first and then powder. Put the yeast powder in the middle, cover it with flour, and put the salt in the corners. Start a dough mixing program (my bread machine kneads the dough for 13 minutes).
-
Put the mixed dough into a crisper or wrap it in plastic wrap and place it in the refrigerator to ferment at low temperature for 13 hours or more.
-
Take out the dough that has been fermented overnight and tear it into small pieces.
-
Then pour the main dough into the bread machine, put the medium seeds torn into small pieces, and start a dough mixing process.
-
After completing the kneading process, add softened butter and start the kneading process again. This time the kneading time is set to 30 minutes.
-
After completing the kneading process, grab a small ball of dough and see if it has reached the expansion stage or if a thick film can be pulled out.
-
Let the kneaded dough rest for 30-40 minutes to ferment.
-
Deflate the fermented dough and divide into nine equal portions.
-
Wrap 9 pieces of dough in homemade red bean paste, seal them side down, and roll them into a slightly round shape.
-
Shape the dough into a round shape and place it in a non-stick baking pan, then place it in a warm place to ferment (about 40 minutes).
-
Brush the fermented dough with appropriate amount of egg wash.
-
Add a few flat almonds and sesame seeds to garnish, preheat the oven to 180 degrees on medium heat for 20 minutes.
-
Move the baked bread to a cooling rack and let it sit at room temperature. Finished product picture.
